To celebrate the launch of Superfood Facial Oil, the London-based Detox Kitchen created this wonderfully nourishing recipe for us combining two of the new brew's star ingredients: Broccoli seed oil and Macadamia oil. Broccoli is high in vitamin C and anti-oxidants for glowing, healthy skin while Macadamia nuts are abundant in Omegas 3, 6, and rare anti-aging 7. To complement this, vitamin B-rich brown rice creates the base of the salad, alongside carrots full of beta-carotene and crunchy pumpkin seeds providing a boost of zinc. Combined with a sesame-citrus dressing, this nutritious salad can be enjoyed on its own or as a side.

Broccoli and Brown Rice Salad with Honey Macadamias

Serves 4

Ingredients

  • 8 oz brown rice
  • 2 heads of broccoli
  • 8 oz grated carrots
  • Salt and black pepper
  • 3.5 oz macadamias
  • 1 oz honey
  • 2.5 oz pumpkin seeds

Dressing Ingredients

  • 1 oz orange juice
  • 1 oz lemon juice
  • 1 oz tamari
  • 1 oz oil
  • Salt and black pepper

  1. Cook the brown rice according to directions on box / bag, then rinse in a strainer under cold water to cool. Leave to drain for at least 10 minutes.
  2. Cut the broccoli into small florets. Blanche in boiling water for roughly 2 minutes, and refresh in cold water.
  3. Mix the rice, broccoli and carrots together. Season well.
  4. Place macadamias on a lined baking tray. Drizzle with honey and bake in the oven at 335º for 10 minutes. Leave to cool.
  5. Place pumpkin seeds on a lined baking tray and bake in the oven at 335º for 7 minutes. Leave to cool.
  6. Blend dressing ingredients together and mix with rice / broccoli / carrot salad. Sprinkle the macadamias and pumpkin seeds on top and serve.
